Functions

The sous chef will:

  • Assist the executive chef in daily duties.
  • Plan menus.
  • Perform inventory-control duties.
  • Check on provisions.
  • Handle food (basic food sanitation)
  • Maintain cleanliness of galley, walk-ins, and dry storage.
  • Provide three meals a day for the crew and any guests on board.

Travel

25% travel required to unanticipated maritime destinations

Requirements

Requires at least three years of experience as a chef, which may include experience as a prep cook or line cook. Must have at least three years of experience with basic classic French culinary techniques, maintaining and cleaning kitchens, sanitation of kitchens, and clean working. Must possess at least six months of prior experience living and working on yachts and cooking for vessel crews. Must possess demonstrated experience showing ability to accommodate guests with special dietary needs on short notice.
